How do you take your pizza crust?

Do you remember a life before you were gluten free? Or has your life always been gluten free? I had a twenty year relationship with gluten before I started my gluten free journey. It was filled in old world pizza, New Haven style pizza, Pizza right from the sacred grounds of Italian soil. Chain style pizza, college campus late night pizza. All always ending with a rush to find a bathroom and a stomach ache I could not hide. Back then, though before I knew my health was at stake, every bite, I thought was worth it. The crispy crust, the thick crust, the very cooked crust, stuffed crust, no crust, bubbly crust, doughy crust. All of it was mouth watering!! My first big memory is in my childhood hometown having dinner with my parents at our local favorite pizza Resturant. I took Southernman back there when we got engaged to celebrate! I have traveled the world and always made sure to have a pizza where ever I go. It is like finding a little slice of home!

When my gluten free journey first was forced to begin I thought I was going to die on a Friday eventing with no pizza. Back then before I had figured out some gluten free magic and that the world, was about to experience the same crisis I was going through, Southernman tried his hardest to give up pizza with me. He even tried to recreate it many times, failing. I thought to myself will I ever be able to enjoy pizza crust again? I even tried after the birth of my first child to go back to a gluten filled life. I had hopped going through the change of childbirth my body might have changed for the better. Sadly, no!

Sixteen years later, I am elated to live in a a world now, were the gluten free world has grown! I am able to have my pick of crusts on a Friday night! I even have a local favorite I call and say extra crispy for me, heavy sauce, lite cheese and my usual toppings!! There are some excellent resources out there now on how to make gluten free pizza!
